Leek Croquettes

- 4 fresh leeks
- 250g minced beef meat
- 2 fresh eggs
- 1 tbsp matzo meal
- 1 tbsp chopped dill, minced
- 1 tbsp flat-leaf parsley, diced
- ½ tsp paprika
- Olive oil, for cooking
- Lemon slices, to accompany
Thoroughly wash the fresh leeks well and trim off the base and most of the green tops. Slice in half lengthways then into 1.5-centimeter rounds. Put in a deep frying pan and cover with fresh water, then cook over a medium flame for about twenty minutes or until softened.
Drain the cooked leeks and transfer in a mixing bowl with the minced beef, eggs, breadcrumbs, dill, parsley and sweet paprika and season generously with pepper and salt. Combine completely using your hands then form a several tablespoonfuls into a ball, pressing a bit. Put on a plate and proceed for the remaining of the ingredients.

- 1kg baby spinach (or else about 500g iced spinach, softened in the fridge in the cooler)
- 3 tbsp extra virgin oil
- 1 yellow onion, diced small
- 2 cloves of garlic, finely chopped
- 100g salty cheese, grated
- 80g soft cheese
- ½ tsp fresh nutmeg
- ½ tsp sweet paprika
- 120g crumbs (1¼ cups), plus extra if necessary
- 3 large eggs
- Olive oil for pan-frying (or sunflower oil)
- Fresh lemon, to garnish
If using leafy greens, wash it thoroughly, getting rid of any tough stems, and coarsely chop it into sizable portions. Put in a big pot with a small amount hot water over a moderate heat. Once wilted, drain in a strainer for about 15 minutes, then press out any remaining moisture and put aside.
When working with previously frozen spinach, thoroughly remove extra water.
